I signed up to bake cookies for a school fundraiser.  The perfect example of following my heart instead of my brain.  Things don’t always go well for me in the kitchen…

But baking cookies was the story of the night.  Some were tossed, some made the cut as “worthy” of the greatest cookie sale.  The best outcome?  Classic monster cookies!  And, let’s be honest, cut out sugar cookies can be a challenge.

Monster Cookies

4 eggs

3/4 cup margarine

2 cups sugar

1 1/2 cups brown sugar

1 teaspoon vanilla

2 cups peanut butter

2 teaspoons baking soda

1 teaspoon salt

7 cups oatmeal

3/4 cup chocolate chips

3/4 cup M&M’s

Beat together eggs, margarine, sugar, brown sugar, vanilla and peanut butter.

Next add baking soda, oatmeal salt then the M&M’s and chocolate chips.

Bake at 350 degrees for about eight minutes.
