The kitchen is not my comfort zone…as I may have mentioned before.  However, today we created some fun in the kitchen making homemade chips and salsa. I wish I could report that the salsa was created from my garden ingredients but such is not the case.  Instead we rely on the amazing folks at the local farmer’s markets!

Black Bean Salsa

1 envelope GOOD SEASONS Italian Salad Dressing Mix (the little packet you find in the salad dressing aisle of your grocery store)

1 can (16 oz) black beans, drained & rinsed

1 cup chopped ripe mango (we didn’t have a mango handy today so we substituted a tomato instead!)

1/2 cup chopped red pepper

1/3 cup chopped cilantro

1/3 cup chopped red onion

1/4 cup fresh lime juice
